Would just having a one button switch do the job or do we want something of an array to plug it into?

If the device is multifunction i'd want at the very least 2, that are expandable. Hard to say without knowing more...

The ability to add some form of external switching, and maybe expression via midi would be cool!

Depends on what you want to do on package size.

Using multieffects, I've found that the type where you go up and down using two switches is annoyingly restrictive. The type with banks selectable with up/down switches and patches within those banks selected by an array of switches are far more flexible but must needs be physically larger. I like the idea of switching via MIDI, then you can pick a MIDI controller to suit your requirements.
